My French Toast Casserole is one of the most popular recipes I’ve shared on Future Expat. Today, I want to show you how to take the same recipe and give it some zip with berries and a brown sugar oatmeal topping.

This easy breakfast recipe takes cubes or scraps of any kind of bread and turns it into a wonderful casserole. I’ve made it with slightly freezer burned hamburger buns, old pita bread triangles and unused hoagie buns.

The recipe uses the basics of any french toast recipe – milk, eggs and vanilla. I also add some cinnamon sugar across the top.

The last time I made my bacon cream cheese roll-ups, I ended up with a bowl of sandwich bread crusts.

Unwilling to throw out the crusts, I decided to use them to bake up some French Toast Casserole.

Then it occurred to me that I had some blackberries in the freezer that would be a great addition to this recipe.

Since I was adding some sweetness to the breakfast dish, I decided to go all the way and add a brown sugar oatmeal mix to the top. With the new topping, the end result also works as a bread pudding style dessert.

I did this a while ago, and don’t remember exactly how much I used. If I was doing it again, it would probably use about 1/2 cup of oatmeal and 1/3 cup of brown sugar.

I baked it following the original recipe and love how it turned out. While I used blackberries, it would work just as well with blueberries or raspberries…or any other favorite berry in your pantry or freezer.

TIP: If you bake with frozen berries they don’t bake away. Just toss them into your recipe frozen and go straight to the oven whenever you add berries to muffins, quick breads or casseroles.
